Most Oils are susceptible to oxidation, but fish oil is highly susceptible.
Oxidation occurs when unsaturated fats—such as the omega-3 fatty acids EPA and DHA—are exposed to heat, light, or oxygen. Oxidized fish oil suffers from reduced EPA/DHA potency—the fatty acids primarily responsible for fish oil’s health claims. Oxidation creates"free radicals," which can cause damage that raises our risk for heart attack, stroke, cancer and other problems.

How do you know if fish oil is oxidized?

Fish oil which is rancid or oxidized may have an unpleasant odour and taste and possibly gel-capsule discolouration. It is generally considered that gel capsules offer more protection against oxidation than liquid formulations, as they are stored in airtight containers. Glass, PET (polyethylene terephthalate), or high-density polyethylene (HDPE) containers, may often be the best choices to minimize exposure to light/damaged by the sun.



As fish oil oxidizes, new by-products begin to form in the oil, which gives off the unpleasant smell and taste of spoiled fish.

  • Oxidized fish oil may raise levels of LDL "bad" cholesterol.

  • In animal studies, oxidized fatty acids have been found to cause organ damage, inflammation, and atherosclerosis, among other problems.

How to Combat Rancidity?


Evaluate Your Product

Test your fish oil for rancidity every few days. The two easiest ways to determine if fish oil is rancid are taste and smell. 


Check Your Fish Oil’s Oxidation Values

The freshness of a Fish oil can be measured by looking at its oxidation values, better known as the peroxide, anisidine, and TOTOX levels.


Peroxide Value - A measure of rancidity occurred during storage. Peroxide value must be less than 5 meq/Kg.

Anisidine Value - Anisidine value should be less than 20 meq/Kg. If it is higher than 20, it means the oil has become unstable and smelly.

Acid Value - The Acid Value should be less than 3 mg KOH/gram. If higher than 3, your product is rancid.

TOTOX Value - This should be less than 26 meq. The lower the Totox value, the better the quality of the oil.

Keep It Cold

Freezing or refrigerating fish oil helps keep it fresh for longer. Or keep it in tight containers. When buying fish oil, look for small bottles, not large containers. The longer a fish oil is stored, the greater the chance it will oxidize over time.


Certificate of Analysis is a document issued by Quality Assurance that confirms that a regulated product meets its product specification. They commonly contain the actual results obtained from testing performed as part of quality control of an individual batch of a product.

Not all fish oils are the same in terms of nutritional content & purity. The best way to understand the product quality, ingredients such as EPA and DHA for fish oils, and their respective strengths are through the Certificate Of Analysis [COA]. COA should list Peroxide Value, Anisidine Value, Acid Value and Totox value to help you gauge the freshness of the oil.  It also lists the amount of PCBs, dioxins, mercury, lead, arsenic and Cadmium. Generally, COA gives an overall idea about the product based on its quality & purity.
